A super easy and quick way to make breakfast, especially for a big group.
This recipe would be great to make on a ski trip – nutritious, filling and quick for lots of friends!
What you'll need – serves 2 (multiply as needed for larger groups)
- 2 sausages – I used miso and leek sausage, but anything will work. Casing removed.
- 1 pepper, thinly sliced
- 2 shiitake mushrooms, sliced
- 3 eggs
- 3 tablespoons of full-fat greek yogurt or ricotta
- 1 tablespoon of fresh basil, chopped
- Splash of canola oil
- 1/4 cup of crumbled feta cheese
Begin by frying the sausage in canola oil on medium-high heat until mostly cooked through.
Add your peppers and stir.
Make three "beds" of the yogurt or ricotta, for the egg to sit atop.
Crack the eggs on your "beds", top with mushrooms then placed in a 350F degree oven for 15 minutes.
Remove from oven, and add your feta.
Return to the oven for an additional 10-15 minutes until your eggs are cooked through to your desired consistency.
Top with the fresh basil along with a drizzle of olive oil when serving.
