This is super easy to prepare with what you likely already have on hand in your kitchen, too.
This recipe serves 2 people – adjust as needed
- 2 potatoes – washed
- Chimichurri
- 1 bunch cilantro
- 1 clove garlic
- Half a lemon
- 1 teaspoon salt
- Half a Scotch Bonnet
- Splash of water
- 1/4 cup olive oil
Slice the potatoes as though you're making potatoes chips, but do not slice all the way through – creating a fan effect. Drizzle with olive oil and salt, and bake at 400F for about 45 minutes to an hour, until the outsides are brown and crispy.
While the potatoes bake, blend the ingredients of the chimichurri together.
Remove the potatoes from the oven once done, and drizzle them with the finished chimichurri.
