Need a great way to use up all your Christmas leftovers?
Try making Okonomiyaki inspired pancakes!
What you'll need:
- 1 cup of finely sliced napa cabbage
- 1 yellow pepper, julienned
- 1 end of fennel, thinly sliced
- 1 avocado, thinly sliced, for garnish
- 1 knob of salami, cut into small chunks
- 1 chilli (optional), finely diced
- Butter and oil for frying
- 4 eggs, whisked
- 1/4 cup panko crumbs
- Cheese (optional)
- Salt and pepper to taste
Begin by frying your chilli (if you chose to add it) in butter and oil with your salami, until fragrant.
Next, add the fennel, cabbage and pepper and fry until soft and slightly browned, adding salt and pepper as you go.
Remove from heat and transfer to a bowl.
Mix with the whisked eggs and panko crumbs, then form into pancakes, placing back into your hot pan, and frying a few minutes on each side until golden brown and crispy.
Garnish with the avocado and sriracha hot sauce. Enjoy!
