  • How to make a heirloom tomato frittata

    The perfect meal to keep you fuelled all day long: frittata!

    As this meal is so simple, using the best quality sources is key – local and organic is a must.

    What you'll need:

    6 organic eggs

    1/2 cup cream

    Small bunch of scallions

    1 heirloom tomato

    4-6 crimini mushrooms

    Olive oil

    Feta cheese for crumble on top

    Thinly slice all of your vegetables, and set aside. Mix your eggs with the cream and whisk for a minimum of 1 minute – this is how your frittata will rise and result in a fluffy texture. 

    Add to a very hot pan and layer your vegetables on top. Leave for a few minutes, then transfer to a 400 degree oven, checking often – about 10 minutes. Turn to broil to brown the top, about 5 minutes. 

    Garnish with fresh basil. Enjoy!
