Many years ago when attending a book club meeting, the host made a dip I could not keep my hands off of. I may very well have finished the entire dish – it was that addictive.
Upon asking her for the recipe, I was shocked at how simple it was.
This has since become a go-to appetizer for me when my fridge needs a restock and friends stop by unexpectedly – it takes minutes and will have them salivating.
What you'll need:
Small bunch of broccoli, chopped very fine
As much garlic as you want – I used three cloves – finely chopped
2 heaping tablespoons of mayonnaise
2 heaping tablespoons of full-fat yogurt or sour cream
1 teaspoon of pepper
1 jalapeno, finely chopped
1/2 cup of feta cheese
Juice from 1 lemon wedge
Mix all ingredients, and microwave for 8-10 minutes. Serve with crudités and bread. Enjoy!
