There's no excuse for ordering in or dining out with recipes like this.
"Fast food" can be healthy and equally as flavourful if you know the right ingredients to use: butter, wine and lots of fresh herbs!
What you'll need:
Cooked pasta of your choice
Sauce:
- 1 onion, thinly sliced
- 1/2 yellow or red pepper, thinly sliced
- 1/2 green pepper, thinly sliced
- 1 tomato, thinly sliced
- Small knuckle of ginger, thinly sliced
- 2 cloves garlic, thinly sliced
- 1 tablespoon of fresh mint, thinly sliced, for garnish
- 1 dried chilli
- 1 tablespoon dried basil
- Crumbled feta, for garnish
- 1 cup of white wine
- 1/4 cup of butter, softened
- Salt and pepper
- Juice of 3 lime wedges
Begin by sauteeing the onion in sunflower oil on medium heat until fragrant and translucent then add the dried chilli.
Add the ginger and garlic, and cook a few minutes more until they are fragrant.
Add your dried basil at this point, followed by all your vegetables, giving them a few minutes to cook down but not completely, as you want to retain some crunch.
Add the juice of your limes, wine, and cream. Bring to a simmer, then add the butter. Once melted, add cooked pasta and mix to ensure everything has been fully coated.
Serve in a shallow bowl and garnish with crumbled feta and fresh mint.
