  • Fried Halloumi Salad

    With the excess of rich foods consumed over the holidays, dishes of this nature are a welcome respite. The fried halloumi adds just the right amount of texture and the sweetness of the mint and apple balance out the dish beautifully.

    What you'll need:

    • 1 cup of thinly sliced cabbage (feel free to substitute arugula or other greens of your choice)
    • 1/4 cup scallions
    • 1 tablespoon thinly sliced fresh mint
    • 1 tablespoon pumpkin seeds, roasted
    • 1/4 cup cherry tomatoes, halved
    • Half an apple, thinly sliced
    • S+P to taste
    • 3 thick slices of halloumi
    • Splash of olive olive
    • Juice of half a lemon

    Roast your pumpkin seeds stirring continuously for a few minutes on high in a non-stick frying pan, then remove. Add a splash of oil and allow it to come to temperature. Add your halloumi, and fry on both sides roughly 1-2 minutes, or until brown. 

    Mix remaining ingredients in a bowl, drizzle with the olive oil and lemon juice, tossing until thoroughly combined. Serve in a large bowl, top with halloumi and garnish with pumpkin seeds.
