  • VIDEO: How to make green pancakes

    I recently won a copy of a new cookbook: "The HealthNut Cookbook" by Nikole Goncalves. 

    Now, I'm not a huge fan of using cookbooks, and this one is no exception. I find them redundant and lacking creativity for the most part. I brought it home and my partner immediately exclaimed "that's one of those cookbooks that has a recipe for a smoothie". He wasn't wrong. 

    Simply put, eating healthy is not hard. All it takes is a little curiosity and experimentation. 

    That said, Nikole did inspire me with her recipe for "green pancakes" – that she describes as "when you can't decide between a smoothie or a pancake, so you put them together."

    Truthfully, I didn't even look at the recipe, I was inspired by the idea and came up with my own. Here's how I did it:

    1 cut of oat flour – don't go looking for this in the grocery store! Just make your own with rolled oats in a high powered blender

    1/4 cup flax seeds

    Blend the oats and flax together into a flour like texture, set aside in a mixing bowl

    1 egg

    1/2 cup cream

    1 cup arugula (or spinach, or whatever green you want)

    1 avocado

    Blend until very smooth, and add to the oat/flax flour. At this point it was very gloopy/thick, and I needed to add about a cup or so of water – whisk in slowly until it resembles typical pancake consistency. 

    Heat a non stick pan on medium high with canola oil, and fry your pancakes a few minutes on each side until golden brown. 

    Now, because I didn't add sugar to this recipe, I felt ok being very liberal with the maple syrup. You could go full savoury and serve with feta cheese or mascarpone – totally up to you! Enjoy!
