Henley opened Pür & Simple in December 2019, just before the pandemic and during the discussion, she shares her remarkable journey navigating the complexities of running a restaurant.
Opening a new establishment during such uncertain times presented its own set of challenges, but Henley embraced the opportunity to bring a new culinary experience to Kelowna.
Despite these challenges, Pür & Simple has managed to foster a sense of community within its walls, with families and regulars engaging in the welcoming atmosphere.

"We're trying to stand out and foster that feeling of community as best we can," says Henley.
