A great way to impress friends for your next dinner party: pasta all'amatriciana
Here's how to make it:
Ingredients
1 bunch of parsley, stems and leaves chopped – keep separated
1 cup of pecorino cheese
Rind of pecorino cheese
8 tomatoes, pureed
2 onions, chopped
2 carrots, chopped
1 medium sized piece of pancetta, cubed
1/3 cup of red wine
1/4 cup of butter
Sautee the pancetta in oil on medium high until slightly browned.
Add carrots, stems of parsley and onions. Sautee until sweated out slightly, add the pecorino ends at this point, and sautee for a few more minutes, then add your red wine, and reduce for a few minutes more.
Add your pureed tomatoes, and reduce the heat slightly – allow the sauce to reduce by almost half – this will take around 1-2 hours.
Keep an eye on it. When it is about halfway there, add half of your chopped parsley, then continue reducing.
Once it has completely reduced, add the remaining parsley, pecorino, and butter.
Serve over your favourite pasta and finish with fresh cracked pepper.
