This is such an easy dish and so pretty to look at!
Use whatever vegetables you happen to have on hand – it would be especially great with eggplant as an addition.
What you'll need:
- 1 tablespoon herb de Provence
- 4 potatoes, thinly sliced
- 4 tomatoes, thinly sliced
- About a cup of crimini mushrooms, thinly sliced
- Olive oil for drizzling and to de-grease the baking dish
- Salt and pepper
Slice all your vegetables, while your oven preheats to 400F. Layer your vegetables in a shallow baking dish, alternating until you build a beautiful casserole.
Garnish the vegetables with the herb de Provence, salt and pepper and olive oil. Bake for roughly an hour, checking often. You're looking for a slight browning on top.
Serve on its own or as an accompaniment to roasted chicken.
