Easy Flatbread | by yours truly @thetreatlife!
This recipe for flatbread can’t get any simpler. I love it because you can customize it however you like with what’s in season, and almost any combination goes! I like using cherry tomatoes, goat cheese and caramelized onions, but you could do mozzarella and rosemary, or spinach and olive, or salmon capers and dill! Whatever floats your boat really.
Here’s the recipe:
1 box frozen puff pastry, thawed
Olive oil
Desired toppings (cheese, vegetables, herbs, etc)
Roll out the thawed puff pastry (best to do thaw it in the fridge the night before you need it) until it’s just a bit smaller than your standard baking sheet. Place the rolled out dough onto the parchment-lined baking sheet, and then add your toppings, leaving a 1-2cm border on the dough. Don’t pile your toppings too high though, or your dough might not cook all the way through.
Bake at 400 degrees Fahrenheit until the crust is golden and your cheese (if using) is melted and bubbly! Usually about 15-20 minutes. Top with fresh greens like arugula, honey or balsamic reduction if you like, and your flatbread is done!
